Whitebait holds a long-standing place in New Zealand cuisine and is appreciated for its subtle, clean taste and versatility in premium dining settings. Sourced from juvenile native freshwater species during the regulated spring season, the fish are collected as they migrate inland along the East and West Coasts of the South Island. Their light, delicate texture suits simple preparation that allows the natural flavour to stand out, whether gently pan-cooked with a dusting of flour or formed into refined fritters for special occasions. The product is available year-round in approximately 450 grams each and should be kept frozen until required, then thawed before cooking.
Nationwide delivery is available for home and commercial addresses, although we are unable to send orders to rural delivery locations or PO Boxes. Orders are generally processed and dispatched within 48 hours, with many arriving within 24 hours. Orders placed from Thursday through Saturday are packed and sent the following business day to ensure consistent quality and reliability.
